Cast Iron Skillet Cornbread

2 cups self rising corn meal
1 egg
1/4 cup canola oil
4 tbsp. oil for skillet
3 cups buttermilk
9 inch skillet
4 tbsp. butter or margarine

Heat skillet in oven while preheating at 400°F.
In a mixing bowl, combine cornmeal, egg, oil and buttermilk.
Gently mix, stopping occasionally to scrape down sides and bottom of bowl.
Using oven mitts, remove hot skillet from oven and add 4 tablespoons of oil, swirling to coat the entire bottom of the skillet.

Pour cornmeal batter into skillet and return to oven to bake until golden brown.
Remove from even and brush top with melted butter or margarine.
