Blackberry Cake

INGREDIENTS:
1 Duncan Hines spice cake mix
4 eggs
1/4 c. Wesson oil
1 can Thank You blackberry pie filling

STEP BY STEP:
Mix together cake mix, eggs, and Wesson oil; cream together well.
Add blackberry pie filling; fold into batter.
Pour into greased baking dish or cake pans and bake according to directions on cake mix box.
Cool and cover with Caramel Frosting.

CARAMEL FROSTING:

INGREDIENTS:
1/2 c. butter
1 c. brown sugar
1/2 c. evaporated milk
1 box confectioners’ sugar

STEP BY STEP:
Caramel Frosting: Boil together butter, sugar, and cream for 2 minutes.
Mix in confectioners’ sugar and stir well. Spread on cooled cake.

This cake can be made in a bundt pan, 9 x 13 baking pan (decrease baking time) or 3 to 4 round cake pans to make layers.
If making a layer cake, you can spread blackberry jelly between the layers.
