INGREDIENTS:
1/2 onion
3 slices fat free bacon
1 tbsp garlic
2 tbsp cumin
1 tbsp olive oil
1-2 tbsp butter
STEP BY STEP:
Chop onion and bacon into small pieces
Sprinkle garlic, cumin over onion and bacon and sauté for 1-2 minutes on high in 1 tbsp of olive oil
Remove from heat and add 1-2 tbsp of butter to melt over top
Mash the potatoes with 1/2-1/4 cup of plain rice milk and 3 slices of veggie slices pepper jack cheese
Add 2 tbsp Dijon Mustard, add the onion mixture. Mash together
Put into casserole dish and bake for 30 minutes (same 375 degree F oven). Serve.
