1 lg. fryer
Salt & pepper to taste
1 tsp. garlic salt (opt.)
1 c. buttermilk
1 c. flour
1-2 c. corn oil or half way up chicken pieces

Cut chicken into serving pieces, wash and dry on paper towel.
Sprinkle with salt, pepper and garlic salt; dip in buttermilk.
Shake in flour in paper bag.

Heat oil to 275 to 350 degrees.

Add chicken; cook until golden brown, turning once.

Drain oil.

Add 1 tablespoon water, cover chicken and continue baking on medium until chicken is tender.

Remove lid and cook 5 more minutes to retain crispness on the outside and will be tender on the inside.
